Business Description
|
This monastery was founded in 990 AD. A thousand years ago, the monks planted vines since most abbeys produced their own food and wine. Then, during the Inquisition, the Abbey was considered a stronghold of the Cathar heretics and was destroyed. Current wine-growing records on the property go back several centuries.
The soil is in the choicest Minervois region, La Livinière, which is in the foothills of the Black Mountains. It consists of sandstone and chalky clay. All growing activities are coordinated with natural “biodynamics” laws: precise timing of certain growing activities with the movements of the stars, moon phases, etc., and NO CHEMICALS ARE USED IN THE GROWING. Production per vine is kept very low for intensity, grapes are handpicked and hand-placed in undamaged bunches into the vats (no screw or pressure feeding), and the barrels are of choice oak from the Allier region. After vinification and barrel aging, the wine is bottle-aged for two years.
